The photo above was from my visit to Phuket and I had this childhood dessert for breakfast. This dessert can be prepared in an instant. Simply have tapioca pearl, coconut milk and sugar in your pantry. Pandan leaves are available in the market and please see note of how to make green pandan extract. You can prepare this Thai dessert without pandan leaves but since the name Yok Manee is derived from the color green of jade gemstone – then the pandan water is necessary for this ancient Thai dessert. Stock up the pandan leaves in your freezer as well and you will enjoy many uses of pandan leaves in your kitchen. 

Serves 8

Preparation time: 5 minutes

Cooking time: 15 minutes

1 cup tapioca pearl

2 cups water

2 tablespoons tapioca starch

½ cup pandanus water

2/3 cup sugar

½ teaspoon salt

6 tablespoons grated coconut flake

1 teaspoon toasted sesame seeds

Arrange a steamer, with 2 inches water. 

Place tapioca pearl in a strainer, rinse and set a side.

Bring water to boil in a saucepan. When the water is boiling pour in tapioca pearl, tapioca starch, pandanus juice, sugar and salt. Stir until it well-mixed and sugar is melted. Spoon about 4 tablespoons of tapioca mixture into 8 ramekins. Sprinkle evenly about 2 teaspoons coconut flake on top of each tapioca cake. Then place 8 ramekins in the steamer and bring to a boil and steam tapioca cake on high heat for 10 minutes. Garnish with toasted sesame seeds before serving.

Cook’s note: Pandanus is a green leaf from screwed pine tree family.

Every year I visit home I enjoy my leisurely walk in the early morning at Kamala Beach. This year I also found an excuse to embrace the beauty of sunset while walking in the evening and went off to do an errand when the sun was near setting and the humidity and heat were less intense.

I was working on a breakfast menu for my guests who were arriving that week. On the menu was an egg dish, bread with pineapple jam, juice, yogurt, tropical fruit, coffee and tea. I love having a basket of tropical fruits ready to peel and eat at anytime, so on this walk my destination was a fruit stand to stock up on tropical fruits like Phuket pineapple, pomelo, banana, mango and papaya. At the stand, I was delighted to see passion fruit. It is a common fruit in Thailand, but one that has rarely had a chance to be on the shelf at the food stand. This is because it has not been so poplar until just the last few years as we have become more aware of the health benefits of our own tropical fruits. Let’s embrace this opportunity.

Prepare passion fruit with juice by removing pulp and seeds

When I reached the fruit stand on the main road before the last intersection and the steep road to Patong, I filled my basket with Thai fruits and the owner gave me a bag full of 20 overripe passion fruits for 50 Baht (about $1.50). The good looking ones were 15 Baht (50 cents) each, which may help explain some of my excitement and appreciation for the passion fruit. Plus the best time to enjoy Thai passion fruit is when the skin is wrinkly and the juice is at its sweetest. I walked home with excitement—it was time to play with passion fruit again. When I am on vacation I enjoy cooking in any small kitchen with just a few ingredients. The pineapple jam I had on hand prompted me to create a passion fruit-pineapple spread to serve on toast or plain yogurt. My tropical-inspired spread was complete. With its tangy, sour taste, the aroma of passion fruit, and the soft, sweet texture from pineapple jam, I had indeed created a wow moment. After tasting the spread, my sister, niece and guests managed to appreciate every drop on yogurt and on toast. This recipe captures the moment. So passionately.

Passion Fruit-Pineapple Spread

I already had some pineapple jam, and when I extracted the passion fruit juice, this versatile recipe easily came to mind. The bright tartness of passion fruit juice combined with thick and sweet pineapple jam to soften the jam’s thick texture and give the perfect balance of sweet and sour with a lingering fruity aroma. We enjoyed them both on toasts and plain yogurt.

Yield: 1 cup

Preparation Time: 15 minutes

Cooking Time: 20 minutes

1 cup passion fruit juice, freshly-made or ready-made

2/3 cup pineapple jam

Place passion fruit juice in a medium size pot over medium heat; when it come to a boil, stir in pineapple jam and whisk over medium-low heat until well combined, about 5 minutes. Let it cook on low heat for 20 minutes to thicken. Place in a clean mason jar and use as a spread or as a fruit sauce on yogurt or cake. It keeps well in the fridge for 2 weeks, or 6 months in the freezer.

The Best is on the Top and in the Middle

Like custard, caramel grated coconut has a goodness that has many uses and places in dessert creations. I have a place in my heart for this sweet coconut delight. I chose an English name for this coconut dessert topping and filling – Caramel Grated Coconut – Sai Maprow -ไส้มะพร้าว – Nah Maprow – หน้ามะพร้าว. Its caramel taste, either as a topping or as a filling, heightens other desserts. I hope you enjoy reading on to discover the uses of this delightful sweet caramel grated coconut in many Thai and Southeast Asian desserts. The recipe follows. It has carefree steps and just two ingredients: grated coconut and sugar (plus a little salt).

Last week I set aside a day to create just one dessert dish – Khanom Sod Sai – ขนมสอดไส้ – Steamed Coconut Cream Pudding with Caramel Grated Coconut Filling. This dessert involved many steps. The preparation, note taking, photographing, and final cleaning took over 6 hours. I love special days like this when recreating a dish reconnects me with my early learning experiences in my family’s kitchen.

However, today I will share with you just one part of the recipe for Khanom Sod Sai, that is the Thai caramel grated coconut. It is a quintessential part of Thai desserts and for other Southeast Asian cuisines as well. There are many intriguing steps, but demystifying them will help you find ways to incorporate this treat in your cooking. Please share your experiences in the comment box below.

The above picture is of Khanom Sod Sai. The caramel coconut ball is placed in the middle of a sticky rice dough, which is then wrapped around it before being steamed with coconut cream pudding in a banana leaf. This is similar to Khanom Tom Khao, where the caramel coconut ball is placed in the middle of the dough, which is then boiled and rolled in coconut flakes.

On the top. Nah Maprow – หน้ามะพร้าว The caramel coconut is placed on top of sticky rice.

In Nah Maprow, the caramel coconut is placed on top of a small piece of banana leaf, which is then lifted up and used to spread the caramel coconut on top of sticky rice before savoring the combination. In Phuket, this dessert is called Khao Neow Nah Cheek – ข้าวเหนียวหน้าฉีก. I typically enjoy this for breakfast when visiting home.

In 2014, I visited the cities of Colombo and Galle in Sri Lanka and traveled to many beautiful places with a friend. Near Ratnapura we learned about Sri Lanka cuisine from Stella, our personal tour guide’s sister. We spent a half day with her family in their kitchen. For dessert, Stella showed us how to make caramel coconut to use as a filling for Sri Lanka crepe. I would like to express my gratitude to Stella for teaching and inspiring me and for sharing her techniques for creating this recipe again with ease.

Step-by-Step: How to Make Thai Caramel Coconut

There are two ways to make caramel grated coconut for Thai desserts. The first way is to mix—either by hand or with a utensil—brown sugar, fresh grated coconut and a touch of salt until they are well incorporated, then pan fry them until the sugar is caramelized and absorbed into the coconut. A second method is to add a little water to the sugar and heat it until it melts. Continue cooking until the sugar burns slightly and has a hint of caramel color, then add fresh or frozen grated coconut. Stir well until the sugar and coconut are well combined and the coconut is coated with the brown caramelized sugar.

My family and most home cooks in Thailand use the first method, whereas culinary professionals and merchant use the second one. The latter has a more intense caramel flavor, depending on how much you let the sugar burn, and it also has more affect on the color of the coconut. Personally I love the second version, show below, which is also the fastest and easiest.

What kind of sugar should you use? Both recipes work with all sugars. In many countries, cooks use white or brown jaggery, which is a more complex type of sugar. In Thailand, some prefer palm sugar, however, in Southern Thailand we are more flexible. My family uses brown sugar, whereas the rest of the Thai community uses palm sugar. Stella preferred white sugar. Combining two kinds of sugar should work as well.

Stir brown sugar, water and salt together in a large pan. Bring to a boil, then reduce to medium heat. Allow mixture to cook without stirring until it is foamy, thick, and almost burnt, about 5 minutes.

The sugar should take on a thin caramel-like texture like the picture above, with a hint of caramel taste or more if desired, before stirring in the grated coconut.

มะพร้าว – Thawed Frozen Coconut

Young coconut – Marrow Num – มะพร้าวหนุ่ม (coconuts that are six to nine months old and lack the husk of the more well-known mature coconut) is preferred in Thailand, but in America my first choice would be frozen grated coconut, followed by shredded coconut from the bakery section.

Let it cook on medium-high heat, stirring often until the liquid is almost evaporated, about 4 minutes. Then reduce the heat to low.

Continue cooking until you can pull the caramel coconut to the side of the pan and no liquid remains, about 3 minutes.

Sai Maprow-ไส้มะพร้าว

Nah Maprow – หน้ามะพร้าว

Cooking Time: 30 minutes

Yield: 50 fillings or topping balls

3 cups brown sugar

1/3 cup water

½ teaspoon salt

3 cups frozen grated coconut, thawed (see note below)

Stir brown sugar, water and salt together in a large pan. Bring to a boil, then reduce heat to medium. Allow sugar mixture to cook without stirring until it is foamy, thick, and almost burnt, about 5 minutes. The sugar should turn into a thin caramel like the picture above with a hint of caramel taste. Now stir in grated fresh or frozen (thawed) coconut.

Let the coconut mixture cook on medium-high heat, stirring often, until the liquid is almost evaporated, about 4 minutes. Adjust the heat to low and continue cooking until you can pull the caramel coconut to the side of the pan and there is no liquid left, about 3 minutes.

Remove from heat and let the mixture set until it is cool enough to handle. With cold water by your side, moisten both of your hands. Drop one tablespoon of the caramel coconut into one hand, press it into a dense ball with your other hand, then place it on a plate. If the mixture is too hot, moisten your hands again with cold water to prevent burning. Repeat the process until all of the coconut has been rolled into balls. Makes 50 balls.

Cook’s Note: Fresh, frozen, or dried grated coconut can be used in this recipe but the cooking time may vary depending on the moisture in the coconut. Pay attention to following the steps after adding the grated coconut.

Heavenly Dessert

When I was young I could not resist eating Khanom Mo Gang – ขนมหม้อแกงถั่ว – Thai Coconut Custard with Mung Beans. One small parcel in a banana leaf was not enough for my hungry soul.

In Thai cuisine there are many kinds of Mo Gang Thai custard but two types dominate: one with egg, palm sugar and coconut milk, and another that includes cooked split mung beans or cooked taro. What makes this Thai custard so special is the coconut milk and fried shallot oil. These two ingredients set Thai Mo Gang apart from other custards.

One event that I have never forgotten was when my aunt purchased a little parcel of Mo Gaeng for everyone for breakfast and my brothers and sister woke to discover that their shares were gone. They have long ago forgiven me and forgotten this, but I still have lingering memories of the taste and my mischief.

In Thailand an individual serving of this Thai dessert is wrapped in a banana leaf and secured with a little wood stick like a toothpick.

Thais commonly open up the little parcel and use a small spoon to leisurely take one small bite at a time. The banana leaf is not only used as a wrapper, but as a disposable plate as well.

The first step is to steam split mung beans ahead of time using Pranee’s Step-by Step instructions from an earlier post for preparing Steamed Peeled Split Mung Beans. The second step is to make fried shallots and shallot oil following the recipe on this youTube video: https://youtu.be/5LTCo3SRWLk. Then the rest of the preparation is very simple.

Prepare the steamed split mung beans and fried shallot ahead of time and the rest is simple.

Place sugar, eggs, salt and Pandan leaf in a medium size bowl. Using a whisk or an egg beater, whip until foamy and the sugar and salt are dissolved, about 1 minute. Stir in coconut cream and repeat the mixing process until well blended, about 30 seconds. Run the egg and sugar mixture through a sieve into food processor, removing the Pandan leaf. Add steamed mung beans to the food processor or blender and blend until smooth, about 1 minute.

Heat the mixture in a deep pan over medium heat. Add 1/2 portion of fried shallots and all of the shallot oil and stir constantly  until the texture changes to a thick soup, about 5 minutes.

Pour the thick batter into a greased 8″ by 8″  baking pan. Sprinkle the remaining half of the fried shallots on the top (see picture below) before baking.

Bake at 375°F in a preheated oven until the top is golden and the edge of the custard pulls away from the edge a little, about 45 minutes.

Serves 8 to 16

Preparation time: 20 minutes

Baking Time: 45 minutes

3 tablespoons canola oil

2 shallots, peeled and sliced

1 1/2 cups evaporated cane sugar

6 eggs, duck eggs preferred

1/4 teaspoon salt

1 Pandan leaf

1 1/2 cups coconut cream

2 cups steamed mung beans

Heat a small skillet over medium heat and stir in canola oil and shallots. Stir back and forth until the shallots are golden brown. Using a slotted spoon, remove fried shallots and divided into two portion, and let them cool. Save the oil for later.

Place sugar, eggs, salt and Pandan leaf in a medium-size bowl, and using a hand whisk or egg beater, beat until foamy and sugar and salt are dissolved, about 1 minute. Then stir in coconut cream, and repeat the mixing process until well blended, about 30 seconds. Strain into food processor to remove Pandan leaf. Add steamed mung beans to the food processor or blender and blend until smooth, about 1 minute.

Heat the mixture in a deep pan over medium heat. Add 1/2 portion of fried shallots and all of the shallot oil into the pan. Stir constantly until the texture changes to a thick soup, about 5 minutes.

Pour the thick batter into a greased 8″ by 8″  baking pan. Sprinkle 1/2 portion of fried shallots on surface (see picture above) before baking. Bake at 375°F in a preheated oven until the top is golden and the edge of the custard begins to pull away from the sides of the pan, about 45 minutes.

A Gift from a Thai village, Durian Paste Candy – ทุเรียนกวน – Thurian Guan

When I visit home I love hanging around the open air market in my village. It is common for each village in Thailand to have an open air market in the late afternoon till the evening from 1 to 3 times a week. We call it ตลาดนัด – Talad Nad – and it is the best way to get fresh and dry ingredients for cooking when traveling to the wet market in town in the early morning is not an option. It is similar to the Seattle Farmers Market, but the stalls are a mix of merchants and farmers. I often enjoy snacks from the food stands, take pictures, and pick up a few things for myself and my family. You can find everything from fresh ingredients to cooked food and seasonal fruits. One durian season I had a chance to reconnect with an old friend, the durian farmer shown below. He had loaded his freshly picked durian fruits—that had dropped from the tree that day—into the back of his motorcycle basket. The durian flesh stays good in the fruit for a few days. He sold his durian at the Talad Nad and around the village. What was left was likely to become durian paste candy.

The peak season for durian is in June and July. During that time, farm families will turn their large surplus of durian into durian candy. In Kamala village, durian plantation owners are famous for their durian candy, a rare specialty commodity. When durian season comes, make sure you ask to be on the list for freshly made durian paste candy, a gift of pride from the village.

In the above photo, the durian paste candy is wrapped in plastic and rolled into a tube. Last year, due to a drought, no durian paste candy was available.

My first post on durian was written in 2011. It was called  “What is the durian and how to open it?” It showed, in detail, how to open durian. Now you are going to learn how to remove the flesh from the stone after you open the fruit. The pulp from 5 durian fruits roughly this size will yield about a kilogram of candy.

The best and easiest to remove the pulp from the seed is to use both hands to squeeze out the seeds, discard them, and leave the durian pulp in the container.

In July 2006, I asked around during one of my visits to Kamala village, Phuket, Thailand and learned that my friend’s family was making durian paste candy. I was able to take pictures and videotape the process. Following is the recipe from my notes and video interview. The durian plantation owner—her name is Pranee as well—said there is no secret to making durian paste candy. It simply requires patience, time, and strong arms to stir the durian constantly. It usually takes her a whole day in preparation. The candy can be 100% durian, or it can call for adding 100 grams of sugar for every kilogram of durian pulp. It is cooked over a low, simmering heat and stirred until the flesh turns into a sticky brown candy. It takes about 6 hours, from morning to late afternoon, until the pulp becomes a shiny lump and it can be rolled into a ball and rolled like a marble. After it cools down, it is wrapped in plastic and rolled into a tube. It is made to order for sale in a half kilo or smaller. The price varies from year to year. This year’s price right now in Phuket is around 200 baht, which is about $7.

Pranee’s tip for small plantation owners is that she saves durian pulp in the refrigerator each day until there is enough pulp to fill the pan. This way it becomes worth her while to prepare the candy with a full pan of durian pulp while she takes care of her granddaughter at the same time. While I was learning from her, I enjoyed watching villagers going by. I had a chance to taste the durian candy shown above. There wasn’t any durian candy last year because the dry and short monsoon season limited flower productivity, but this year there is a great surplus of durian, which predicts that there will be a lot of durian paste candy going around in the village. I can’t wait to taste it again this year.

It is also known as Thurian Guan, Durian Guan, Durian Paste, Durian Fruit Roll, Durian Cake and Durian Jam.

Blue & Purple 

Dok Anchan – Butterfly Pea – Clitoria ternatea

What is that flower behind your ear? นั้นดอกอะไรอยู่หลังใบหูของคุณ. In a Thai village, the answer might be that it is a jasmine, hibiscus or butterfly pea flower. You often see women or men in Thai villages wearing flowers behind their ears on special occasions. For me personally, my answer would be that it is a blue butterfly pea flower.

In addition to wearing a blue butterfly pea flower – ดอกอัญชัน (dok anchan) or Clitoria ternatea – behind my ear while working in my garden, I would like to introduce you to its properties as a Thai culinary flower. Butterfly pea is an annual vine that is native to the land in southeast Asia near the equator. Thais love dok anchan for it beautiful unique looks and for its culinary uses as a food coloring and as an edible flower. My friend Somrak uses dok anchan in her Thai cooking at home, shredding it into a fine ribbon and adding it to rice salad, or for making a tea, or adding blue color extract to steamed jasmine rice. Many hotels in Thailand greet guests with a welcome drink made from dok anchan. But above and beyond all of these uses, our ancestors recognized it for its medicinal benefits, which include its anti-depression, anti-inflammatory, and anti-cancer properties. The blue concentrate added to hair products also promotes healthy hair growth (please see related links below).

In Thailand I grew butterfly pea plants on a trellis, but often enjoyed the harvest from friends’ gardens. In the Thai village lifestyle in the old days we shared or exchanged our surpluses with one another. The vines can produce many flowers a day, so often they went unused. This meant that at any  moment there were always flowers waiting for you in someone’s garden and we helped ourselves when needed. The pigment in the flowers comes from anthocyanins, and has long been widely used in Thai and Malaysian cuisines for blue or purple food coloring for butterfly pea sticky rice. In Thailand, any foods prepared with shades of blue, purple or pink come from dok anchan. In addition, southeast Asia uses the flowers in traditional Ayurvedic medicine.

Chaw Muang is a traditional Thai snack that can have a sweet or savory filling. After preparing a butterfly pea purple water infusion, the water is added to the dough according to the amount required in the recipe.

Step-By-Step Instructions for Making Blue and Purple Butterfly Pea Color Extracts

First, steep 12 dried or fresh butterfly flowers in 1 cup boiling water.

Loner

When I left East Wenatchee, my Thai friend, Suprattra Pornprasit gave me a bag of fully ripe apricots from her tree. When I returned home, I immediately cooked them with sugar until it looked almost like jam. I chilled the mixture overnight and prepared the apricot ice cream the next days. Frozen dessert is great to have around. I didn’t add any spices as apricot flavor really shines by itself at the frozen stage. I tried serving the apricot ice cream in many different ways to accompany other desserts, but its flavor seemed pale and uninteresting by comparison. The best way, I learned, is to enjoy apricot ice cream by itself; the flavor is so bright and lively and right after a Thai meal. I would do exactly the same ice cream with local apricots next summer.

Serves: 12

3 cups apricot puree from fully ripe apricot flesh, skin and stones removed
1 cup sugar
1 cup heavy whipping cream
1 cup milk

Place apricot puree and sugar in a medium sauce pan and cook over medium heat until the fruit is translucent and has a jam-like texture, about 20 minutes. Chill or keep in the fridge overnight.

Place heavy whipping cream and milk in another medium saucepan and cook until it begins to steam, then let it cook on low for 2 minutes. Bring to room temperature and chill. Place in an ice cream maker and follow the manufacturer’s guidelines to make ice cream. Remove and keep in a freezer-proof container. It will keep in the freezer for up to 2 months.

Monastery Banana Bread

My son and I were at the Atammayatarama Buddhist Monastery early in the morning one day last week. We had volunteered to water over 20 newly planted trees surrounding the new meditation hall. Later in the morning I also offered food to three Thai monks. They were Southern Thai dishes such as stir-fried spicy stinky been with beef, Thai chili dip, Thai yellow curry rice and fried eggs. Since I am familiar with the kitchen, I also became a temporary helper there for the day. I helped visitors to properly place foods they had brought from home and to properly present them to the monks. At the end of the day, there were more than a dozen fully ripe bananas that had not been eaten. Waste not, I offered to take them home and return them to the Monastery as banana bread.

This is my banana cake recipe from Thailand. I modified it into a quick and easy recipe for banana bread.

My banana bread recipe has long been on my list to share with you, but it never seemed to work out to do so until now. First, I found my 28-year-old recipe notebook which is always misplaced and hard to find. Second, I had the free time to make banana bread as well as a good reason for making it. The next day I made 4 loaves with one single recipe. It is a perfect recipe to bake once and share with friends and families as hostess gifts or for a community event.

Banana Bread-Cake – ขนมปังเค้กกล้วยหอม

This recipe makes an oil-based cake or quick bread that is baked in a loaf pan like a bread. Since vanilla and butter taste so good with bananas, I kept them in my recipe. I used olive oil because it is a healthy fat, but you can use any vegetable oil. There are no nuts in this recipe because I prefer it without. This recipe is light, somewhere between banana bread and banana cake. If I wanted to make a banana cake, I would keep the recipe the same but add one more cup of sugar, bake it in a cake pan, and then frost it with my dreamy coconut frosting recipe. But since I baked it in a loaf pan, let’s call it banana bread.

This recipe makes four loaves of banana bread with a cake-like texture. It is unbelievably easy. Just stir the ingredients together and bake with fun. Enjoy it plain or with the frosting. If you wish to have it plain but sweeter, you can add one more cup of sugar or garnish it with frosting.

Yield: 4 loaves

7 cups cake flour
1 tablespoon baking soda
2 tablespoons baking powder
1 ½ teaspoons salt
2 sticks butter, melted
¾ cup olive oil
10 to 12 ripe banana, peeled, sliced and chopped
3 1/4 cups white sugar
8 eggs
2 tablespoons vanilla

Preheat the oven to 350 degrees F. Prepare loaf pans with oil and coat with flour, then set aside.

Sift flour, baking soda, baking powder and salt twice.

In a large bowl or 6-quart pot, stir butter, olive oil, banana and sugar together until blended. Then stir in eggs and vanilla until creamy. Add flour mixture 1/2 cup at the time, stirring after each addition until mixed. It will yield about 16 cups of batter. Divide equally into 4 loaf pans. Baking time is about 50 to 60 minutes. Bake without disturbing the cake for 45 minutes and then check the cake with a toothpick or wooden skewer; when it comes out clean, remove the pans from the oven. Let them rest on a wire rack for 15 minutes, then remove banana bread from the pans.

Romancing with Lavender

Can you smell that? This time it is something familiar to us all: lavender. It is not an indigenous Thai ingredient, but it is one that is easily adapted to Thai kitchens, just like any fragrant flower. So here is my contemporary Thai dessert, Coconut-Lavender Ice Cream. It was born last week from romancing with lavender in my kitchen. It has been three years since I met my friend Kathy Gehrt, cookbook author and the founder of the website Discover Lavender. She opened my world. Like most of us, I wondered how could one eat perfume flowers? The more I learn about how to cook with lavender, the wilder I get. It is an amazing discovery. For a change this post is not directly related to Thai cuisine, but a study of taste as a food lover. One should never stop exploring.

Culinary Lavender

Two years ago my friend purchased a few varieties of culinary lavender plants from the Lavender Wind Farm. This summer the plants took off. They have yielded many flowers, so last Tuesday Barbara and I got together and celebrated our first harvest day. We prepared lunch together and added a lavender accent to everything we had for lunch. We got creative. First I made an avocado and nectarine salad with lavender as a fragrant herb and garnish. Then we added a sweet bread spread with lavender butter, followed by baked salmon with lavender salt, and a lovage and lavender earl grey tea. After lunch we made lavender sugar, lavender infused honey and lavender salt. How lucky am I to have then also returned home with two large bunches of fresh lavender? Coconut-Lavender Ice Cream with mixed melon

 Coconut-Lavender Ice Cream is ideal to serve in a summer month with a chilled mixture of water melon, honey dew melon and cantaloupe.

For a summery dessert in July there is nothing better than coconut ice cream with a scent of lavender. I have made a few versions and love to keep the coconut with a custard texture as the main flavor followed by a hint of lavender. It is a simple, easy recipe but the trick is to heat the cream mixture above 175 degrees, then after tempering it with the egg, bring it back to the stove top again but do not let it get higher than 160 degrees. When churning the ice cream, I recommend starting with a cold batter then do not churn it more than needed—about 25 minutes or until it starts to form a solid ice cream consistency. Finish the process in the freezer. Follow these tips to get a custard-style ice cream with a soft silky texture. I hope you have a chance to share this coconut-lavender ice cream with your families and friends this summer. Let’s create a romantic flavor and the fragrance of lavender in the air.

Coconut Lavender Ice Cream

Anyone can make ice cream today. All you need is a simple machine and a good recipe to follow. For a lactose-free recipe, simply replace the heavy whipping cream with the same amount of coconut milk.

2 cups heavy whipping cream
2 cups coconut milk
3 tablespoons culinary lavender
8 egg yolks
1 ¼ cup lavender sugar (please click to see recipe)
 

First you will need to freeze your ice cream churning bowl at least 24 hours beforehand.

Prepare an ice water bath in a container that is larger than the pot.

Bring heavy whipping cream, coconut milk and lavender to a gentle boil and cook on medium-low with a gentle boil for 5 minutes or until it reaches 175 degrees.

Whisk yolks and lavender sugar in a large bowl until they are creamy, light and puffy like ribbon, about 10 to 12 minutes.

While slowly pouring the cream mixture into the yolks and lavender sugar mixture, stir constantly with the other hand to prevent the egg from curdling. Strain the mixture to remove the lavender as you pour it back into the same pot; whisk constantly while cooking on medium-low heat. The setting should keep the temperature below 160 degrees and the mixture should be steaming but never boiling. Observe the texture; watch for it to begin to thicken, changing from creamy and beginning to take on the appearance of a soft custard. When it is thick enough to coat the back of the spoon, remove the pot from the heat and place it in the prepared ice water bath.

Cool it in the ice bath and and then pour it into the prepared ice cream machine. Turn on the machine and continue according to the machine instructions, usually about 20 to 25 minutes. It should have a texture of soft ice cream. Put it in the freezer for 4 hours before serving.

But best of all is if you have sunny spot in your garden, plant your own culinary lavender. Kathy Gehrt recommends the Royal Velvet variety. Next I recommend that you immerse yourself in a lavender world by visiting the Sequim Lavender Festival in Sequim, Washington.

Dreamy Coconut Frosting

I have been home from Maui for over a week now and I still dream of the luscious tropical deserts from my recent trip. I am totally inspired and determined to create an easy version of a coconut dessert that will reflect my trip. For a dinner party last Sunday I baked a coconut cake the day before by following a layer cake recipe from a box of cake flour and using coconut milk in place of milk and substituting coconut flavoring for vanilla. (You can do the same or try the links to the many wonderful coconut cake recipes that I have added at the bottom of this page.)

Last Sunday was perfect. I brought the coconut cake to a Thai friend’s dinner party to complement their Thai dinner. I was glad they liked the cake. They loved the light texture of the frosting and the generous amount of sweetened shredded coconut. I hope you will enjoy this recipe and add a dream-like tropical dessert to your Thai dinner at home.

A Creation of Tropical Flavors

Coconut Cake with Coconut Frosting was the answer to my longing to create a dish to duplicate the flavors of a tropical land in a western kitchen. I personally have never tasted coconut cake in Thailand but came to love the cake in America and most recently on my visit to Maui. I can’t live without coconut and was excited about adding coconut cake to my repertoire.

The body of the cake that I envisioned can be any white, spongy cake that gets its coconut flavor from coconut milk and natural coconut flavoring. Its frosting should be light and fluffy with pure coconut flavor and a mouthful of shredded coconut.

Butter, Coconut Cream and Powder Sugar = Coconut Frosting

First step: Cream butter, then add powdered sugar and coconut cream.

Step 2: Coconut Frosting

Step 2: Stir in coconut flavor, jasmine flavoring essence and sweetened shredded coconut.

Step 3: Spread frosting between the layers and on the top and sides of the cake; add sweetened shredded coconut on the top and along the sides.

When it comes to making coconut frosting for coconut cake, I keep it simple, low fat and fast.  The whole process should be easy and carefree. The frosting needs to be creamy, but thick enough to stick to the surface of the cake and to allow the shredded coconut to stick to it. We need either cream cheese or butter to begin with, then I use coconut cream to lighten it up and add powdered sugar until the mixture gets to the desired texture. For coconut, you can use dry coconut chips/flakes, freshly grated coconut or simply sweetened, shredded coconut. I baked the cake the day before and made the frosting the next day—it doesn’t take long to whip up and spread—then the cake is ready to serve. The secret to making this frosting dreamy is to have a real coconut flavor heightened with either vanilla, rose, lavender or jasmine.

Yield: 2 cups

1 stick unsalted butter, at room temperature
2 cups powdered sugar
1/3 cup coconut cream (the thick top layer from a can or carton of Thai coconut milk)
1 pinch of salt
1 teaspoon coconut flavoring (I like Frontier Natural Flavors)
1 teaspoon flavoring essence Jasmine (Mali)
2½ cups sweetened shredded coconut, divided
 
With an electric mixer, beat butter on medium speed until creamy. With a spatula, fold in sugar and coconut cream; beat until creamy, about 3 minutes. Fold in coconut flavoring, jasmine flavoring essence and 1½ cups sweetened shredded coconut. You may use ½ cup of the finished mixture as a filling and the rest, about 1½ cups, as frosting.

Spread the frosting to cover all of the cake surface, then cover the frosting with the rest of the sweetened shredded coconut.

Holiday Sweet with a Tropical Accent

Coconut Tea Cakes

Finally, this is the year that I have set aside the whole month of December to indulge myself with food and friends. I am a well-pampered cook.

This past week, my Italian culinary group, who traveled together to Italy in 2004, got together for a fun cookie exchange. I returned home with assorted cookies and sweet delights. My son, who appreciated them all, loved the Russian Tea Cakes, also called Butter Balls or Mexican Wedding Cakes. My friend bakes them every year from Betty Crocker’s Recipe.

I love the flavor and the texture of the Russian Tea Cakes and imagined that they would be good made with Bob’s Red Mill coconut flakes and almond meal/flour, both of which I have had in my freezer for a long time. So I started by following the recipe but played with the proportions of coconut flakes, almond meal and flour. I kept the amounts of butter and powder sugar from the Russian Tea Cakes recipe as a backbone structure and kept the preparation and cooking methods the same as well.

Several friends who love coconut loved the coconut tea cakes instantly. My son, however, still prefers the traditional Russian Tea Cakes!

If you prefer, you can add coconut flakes to the powdered sugar to dust the baked cookies; it won’t stick, but it makes a great garnish just before serving.

Coconut Tea Cakes

I love coconut and incorporate it into recipes any time I can. While baking Russian Tea Cakes for my son, I played around with my concept of Coconut Tea Cakes and it worked on the first try. Coconut flakes are edible in all forms, toasted or not. Personally I love dried coconut flakes just the way they are. This recipe should also work with sweetened shredded coconut but the outcome will be different than my version which highlights the dry coconut against the buttery texture of the other ingredients. Anytime that the dough fails to form a ball, add a little more melted butter to hold it together.

Yield: 3 dozen
 
2 cups flour
¼ cup Bob’s Red Mill Almond Meal/Flour
¼ teaspoon salt (omit if salted butter is used)
1 cup Bob’s Red Mill Unsweetened Medium Shredded Coconut
1 cup butter, softened
½ cup powdered sugar, plus ¼ cup for dusting 
1 teaspoon either coconut extract or almond extract
 

Preheat oven to 375°F. Prepare a wire rack for cooling the cookies.

Combine flour, almond meal/four, salt and medium shredded coconut and set aside.

In a large bowl, beat butter, ½ cup powder sugar and coconut or almond extract on medium speed until creamy. Using a spatula, fold in flour mixture slowly until it is well-combined and you have a  large ball of dough. Divide the dough into four balls. Roll each ball into a cylinder and cut into 9 equal pieces. Roll each piece into a perfect round ball and place onto a baking sheet. You should have about 3 dozen.

Place in the oven and bake for 12 to 15 minutes until a tiny hint of yellow-brown appears on the top and the bottom. Remove cookies to the wire rack.

Place ¼ cup powdered sugar in a small bowl, then drop in slightly cooled cookies one at a time, dusting them with powdered sugar before placing them back on the wire rack. Before packaging, storing or serving, dust the cookies once again with powdered sugar.

A Divine Fruit, Persimmon ลูกพลับ 

Here in Seattle, I have been savoring persimmons during all of November and now into December. Persimmons reached their peak this last week. The abundance of this fruit at peak season provides a low price and high quality sweet fruits and this is when I am inspired to cook with persimmons. This year in my kitchen I found two delicious new ways to cook with them: persimmon-orange butter and persimmon upside-down cake. Today I will share with you my discoveries of this divine fruit which only appears once a year.

Fuyu Persimmon fruit – ลูกพลับ

The yellow-orange color of persimmon and its aromatic sweetness make this fruit special. In the U.S., the season for persimmons is in November and December, and they give us  a special way to celebrate the holiday seasons. Persimmons arrived in the U.S. and Europe over 200 years ago. There are two varieties in Seattle market: Hachiya and Fuyu. The former is recommended to eat when it is fully ripe. The latter, Fuyu, is my favorite and it is the variety most commonly available, so my focus today will be on the Fuyu persimmon.

Fuyu persimmons (Diospyros Kaki L) are native to Northern China. It is an ancient fruit—a fossilized persimmon was found in the tomb of the emperor of the Han Dynasty. Fuyu persimmons first traveled from China to Thailand in 1937, but they did not become widespread until the Royal Project Foundation under Kasetsart University  conducted a study in 1969 that grew various varieties of persimmons in Thailand and led to the successful establishment of persimmon farming in Chiang Mai, Chiang Rai and Phetchabun. These are three persimmon varieties in Thailand: Xichu, Fuyu and Hyakume. (Source: 111 Thai Fruits by Nidda and Thaweethong Hongvivat published by Sangdad). The season for harvesting them is from July till September each year.  The nutritional benefits from persimmons are priceless. It is high in potassium, vitamin C, and much more.

When the hint of green disappears from the skin and is replaced by a yellow-orange color, one can snack on unripe Fuyu persimmon, though the ripe ones are the best. Persimmons can accompany an assorted cheese platter, much like pears or grapes, or combining green salad with bacon. For dessert, last year I found my pleasure by adding persimmons in coconut milk to my pearl tapioca pudding just before serving. This year, in the process of creating a dessert for 70 people, I found myself preparing persimmon-orange butter to serve over sweet sticky rice. Then came persimmon upside-down cake; this was magically created right after baking cranberry upside-down cake for my family. For an impromptu inspiration, all we need is to have plenty of persimmons around while they are in season.

Persimmon-Orange Butter

Yield: 2 cups

You can use persimmon-orange butter on just about everything, or you can eat it plain like apple sauce. This is my favorite way:  served with sticky rice, on top of peanut butter and fruit butter for the sandwich.

6 fully ripened Fuyu persimmons, peeled and chopped
Zest of one orange
6 oranges, peeled and chopped
1/4 teaspoon salt
1/2 cup sugar
1 cinnamon stick
3 tablespoons triple sec
3 tablespoons butter

Place persimmons, orange zest, orange, salt, sugar, cinnamon stick, triple sec and butter in a large saucepan. Let it cook on medium heat until softened and all juices from the fruit have evaporated, about 30 minutes. Stir often during the cooking. Remove cinnamon stick. Pour the mixture into a blender or food processor and blend until smooth. Store in the refrigerator for up to two weeks.

The Making of Persimmon Upside-Down Cake

When I was looking for a spice to compliment the flavor of persimmon, I picked up my cinnamon powder from Vietnam and star anise powder from Thailand. After smelling the star anise, I decided it was a sure thing. At that moment my eye glanced over at the star-shaped center of the persimmon and I decided to place a star anise in between the slices of persimmon. The star anise mirrors the pattern of the star-shaped center of the persimmon. Perfect.

I was also happy that I had some persimmon-orange butter that I had created on another day. This allowed me to add some persimmon flavor in the body of the cake.

I baked Yankee Cranberry Upside-Down Cake many times last week, which is what led me to this project.  I played around with persimmons and spices I had in the kitchen, and by the time the cranberry upside-down cake was finished, my persimmon-star anise upside-down cake was ready to go in. It became totally a different cake with its own flavor profiles, but it was the Yankee Cranberry Upside-Down Cake that inspired me with confidence.

Baking time: 35 to 40 minutes

Serves: 8 to 12

6 tablespoons butter, melted
¼ cup brown sugar
1 ¼ teaspoons star anise powder, divided
1 tablespoon triple sec, divided
3 persimmons, peeled and sliced lengthwise into 6 pieces, each about 1/3 inch thick
5 star anises, whole
3/4 cup sugar
2 eggs, at room temperature
1 ¼ cups flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup buttermilk
3 tablespoons persimmon-orange butter, persimmon pulps or orange marmalade
 

Preheat oven to 350°F.

Cover a 9-inch spring form pan with 2 tablespoons melted butter, then sprinkle with brown sugar, triple sec and ½ teaspoon star anise powder to cover entire surface. Arrange persimmon slices and star anise as shown in the photo above.

Combine flour, baking powder, remaining star anise powder and salt.

Beat the remaining 4 tablespoons butter and the sugar very hard by hand until they are well mixed. Then beat in eggs, one at a time, very hard by hand until the mixture is custardy. Whisk in ½ cup of the flour mixture, mix well, then whisk in ¼ cup buttermilk; continue this method of adding the flour and buttermilk until you finish with ¼ cup flour.  Pour the batter into the center of the springform pan, smoothing it with a spatula to make it evenly cover the persimmon.

Bake on a rack in the center of the oven until a wooden toothpick inserted into the center comes out clean, about 35 to 40 minutes. Let it cool for 5 to 10 minutes. While the cake is still warm, invert the cake onto a serving platter.

Dragon Crystal Ball – แก้วมังกร

Last Tuesday a friend and I prepared a tropical fruit salad together in her kitchen to test a version of my versatile Thai mixed fruit salad recipe. It is a recipe that I have made countless times and the results are always good, though never the same due to seasonal inspirations. This time I focused on just three different kinds of fruit, each high in anti-oxidants and at their peak fresh in the market. Tropical fruits have so many potential healthy benefits, I loved creating a recipe of the moment for you to enjoy. This combination of dragon fruit, papaya and Thai grapefruit is unique; I hope that you enjoy the recipe. It works really well with all fruits, so let’s play with tropical fruits!

Dragon Fruit  (Hylocereus undatus) is also known as red Pitaya, or in Thailand we call it Kaeo Mangkon – แก้วมังกร. The most commonly-seen “dragon fruit” in the market is a red-skinned fruit with white flesh. There are two more varieties, one with red skin and red fruit and another with yellow skin and white fruit, but the red skin and white fruit with black seeds is the most common.

Dragon Fruit is native to Central American and its neighboring areas. It came to Southeast Asia about a century ago and is believed to have been brought to Vietnam by French missionaries. It is now very popular throughout Southeast Asia where there is an ideal tropical climate to grow this cactus-like green plant with its abundance of large flowers that become the red fruit. Because of its beautiful looks and auspicious name, dragon fruit is often seen in Thailand and Vietnam on ancestor altars or being presented to a friend as a gift. It is quite dramatic looking both inside and out.

Dragon fruit is easy to prepare. After trimming off the top and bottom, cut the fruit in half then use your thumb and pointer finger to press the skin away from the fruit; it will peel off easily. From there cut the fruit into the desired shape. The flavor is not dramatic compared to its appearance. The fruit is similar in someways to a kiwi fruit, but the texture is denser. It has a gentle sweet-sour taste and the seeds, which look like black sesame seeds, provide a fun texture. Dragon fruit’s texture, unique look, and unassertive taste combine to make it a star in this mixed-fruit salad.

This deep rich yellow-orange papaya is so delicious and creamy. I was careful to add it gently into the salad, mixing just enough so that the papaya flavors become well combined with the dragon fruit and Thai grapefruit.

Pomelo, the third ingredient in my salad, is also known as Asian or Thai grapefruit. It adds a citrusy sweet and sour flavor to the salad. Thai Mixed Fruit Salad with Dragon Fruit 

Som Tum Pollamai Kao Mangkon

Servings: 6    Preparation: 15 minutes     Cooking time: 5 minutes

Som Tum Pollamai has become a trendy dish in Thailand over the last few years, even though it has been known for centuries. It is simply a fruit salad with an accent of Thai herbal flavors and aromas. Dragon fruit, papaya and pomelo make a great combination because they give you a great anti-oxidant boost and much more. My friend commented that this would make a great fruit dish for a holiday brunch as well as being fun to serve at a poker party because the cubed dragon fruit look so much like dice. 

6 cups mixed seasonal fruits, peeled and cut into small bite-size cubes
4 tablespoons brown sugar or palm sugar
2-3 tablespoons lime juice
¼ teaspoon salt
3 tablespoons lemongrass, thinly sliced (see Pranee’s Youtube video demonstration how to prepare lemongrass)
3 Kaffir lime leaves whole, or 1 tablespoon lime peel
1 cup mint leaves

Mix sugar, lime juice and salt together in a small bowl and stir well. Place the mixed fruits in a large salad bowl, then sprinkle the liquid mixture over the fruit; toss gently but thoroughly until the dressing and fruits are well combined. Chill in the refrigerator for at least a half-hour to let it sit and develop flavor. Before serving, add lemongrass, Kaffir lime or lime peels and mint and mix gently. Garnish with mint leaves or short stalks of lemongrass as desired.

Cook note: Other fruits that go well together include apple, pear, guava, cantaloupe, pineapple, Som Oh (Thai grapefruit) or any citrus fruits, grapes, melon, honeydew melon, banana, strawberry and half grated green mango.

Conditional Love

Durian ทุเรียน, Durio Zibethinus Merr., is a native plant to Brunei, Sarawak, Malaysia and Indonesia. Southern Thailand is a part of the Malay Peninsula and it has a tropical climate pattern similar to Malaysia.

One of my memories of growing up in a village on a hilly isle of PhuketSouthern Thailand, is of the beginning of durian season. It would begin after two months of monsoon, around June and July, when the earth was moist and the mountains a lush green. The villagers would gather ripe durians that had fallen to the ground the night before and sell them out in front of my grandmother’s home the next morning. Many piles of 4 to 8 durians in all sizes were auctioned off each morning. Later the winners carried home the thorny fruits which had been tied up with twine or string. Then the whole extended family would luxuriously savor the heavenly durian, a feast of nature. Durian was not a fruit we enjoyed everyday, just as you would not want a rich custard everyday. Eating and sharing durian once or twice a year was an indulgence and a family ritual.

My last visit to Thailand in July 2011 was a memorable and fruitful one. I spent many days working on my plantation with my gardener and it was right at the peak of durian, bamboo shoot, and sator season. Durian (known as stinky fruit) and sator (also known as Petai or stinky beans) are infamous for their unique smells, though their health benefits transcend their strong odors. On my plantation, durian and sator grow side by side, a part of the Southern Thailand hillside landscape. One morning we had durian for breakfast with dark Thai coffee. As those of us who love durian say, “it tastes like heaven, a perfect custard on earth.” I was glad to taste durian again after a long time without it.

Life and culture around Seattle are not the same as in the village of Thailand. Here it is hard to convince friends and students to embrace durian’s infamous stinky side. My rules for eating durian are these: it must be a good durian (for me, this means a Phuket durian), in-season, not too ripe, eaten in small portions once or twice a year, and never mixed with alcohol. I would also recommend not socializing with people who don’t like durian the day you eat it, and don’t carry it around in a small closed space or a home with an air conditioning system. In Thailand, durian is considered contraband if you carry it in a rental car, or in air-conditioned public places such as buses, hotels or airplanes.

There are many durian cultivars in Thailand but in Phuket the small, native cultivar is popular with locals as well as tourists from all over Asia. When visiting Thailand during durian season, ask someone who is knowledgeable about durian to introduce it to you. If you try the right one, chances are you, too, will taste the heaven—and the smell won’t put you off too much. And you will have something to talk about for a lifetime!

The best way to enjoy fresh durian is in moderation. Some people experience a fever after eating durian because it contains so many calories. One hundred grams of durian has about 30 grams of sugar, 25 grams of protein and approximately 144 calories (please see source below). Besides eating fresh durian, you may find durian in many desserts: Kao Neow Thurian, sticky rice with coconut milk and durian sauce; Thurian Icecream, durian ice cream; and Thurian Gwan, durian candies.

How to open the durian with a paring knife and cleaver

Opening durian requires some skill. Below are step-by-step pictures on how to open the durian the way a Phuketian does it. You will need two thick towels to protect the counter and your hand, a cleaver and a paring knife.

Look for a split in the durian

First remove the stem, then find the natural split in the hull. Use a paring knife to follow the split and make it wider, then use the cleaver to twist the hull open.

Insert the cleaver into the split line and then use the cleaver to twist the hull open.

Use both hands on each side of the split to pull and force until the hull opens completely

Drink Me

It has been exactly a week since I returned from Thailand and I am still trying to catch up with our Seattle summer. My friends have all assured me that I didn’t miss much during the past month as we are still having the same cold weather we had in June. This July, Seattle hit the record lowest temperature for summer, so all I really need to catch up on is eating the plentiful seasonal fruits and vegetables from the local farmers markets and nearby towns.  

Hami Melon

During my first grocery shopping back here in Seattle, my cart was full with all sorts of berries. And then my eye caught on a good-looking melon that I haven’t tried: Hami melon. It is grown in California and available from mid-May to July and from September to December. I let it ripen at home for a few days and its sweet aroma was inviting me to taste it. The sweet scent reminds me of the Thai long muskmelon that I used to grow a long time ago in my organic garden in Phuket—it grew abundantly despite my lack of knowledge and farming experience.

Hami Melon

Hami melon is a type of muskmelon, a Chinese melon variety. A good one can taste sweeter and have a higher sugar content than most other varieties of melon. I decided to make a smoothie with coconut milk to duplicate Taeng Thai Kati, a famous Thai muskmelon dessert made with coconut milk, but we will drink ours instead of eating it. I kept the flavor profile and the amounts of ingredients the same as in Taeng Thai Kati, but added a generous amount of crushed ice and simple syrup to turn it into a nice cold smoothie. I used only one-third cup coconut milk in my recipe, a perfect amount to make a smoothie, a healthy summer drink. But if you are looking for a nice milkshake-like drink and dessert combo, add a scoop or two of coconut ice cream; it would taste heavenly. When a sweet flavor is needed, honey or palm sugar simple syrup are good choices to add a dimension of sweetness and aroma.

Stock up on a few cans of coconut milk, then anytime the sweet floral scents of melon invite you, all you have to do is prepare this recipe. Hami melon is hard to resist, especially when it is combined with alluring fresh coconut milk. Drink me.

Coconut Melon Smoothie

Nam Kati Taeng Thai Smoothie

น้ำกะทิแตงไทยสมูทตี้

Serves: 2 to 4

Yield: 3 cups

16 ounces (see note) diced Hami melon, seeded, peeled and diced, or substitute honey-dew melon
⅓ cup coconut milk or coconut ice cream, more as desired
1½ cups crushed ice
2 tablespoons palm sugar simple syrup, optional (see note)
pinch of salt

Place melon, coconut milk, ice, sugar and salt in the blender and blend until smooth. Pour into a tall glass and serve right away with a straw.

Pranee’s Note

A 4-pound Hami melon (medium size), seeded, peeled and diced will yield about 2 pounds of diced melon.
 
To make palm sugar simple syrup, place a disc of palm sugar (about 4 tablespoons) and about ¼ cup water in a saucepan.
Bring to a boil and cook on medium heat for 5 minutes. Cool and chill. Keeps in the refrigerator for up to a week.   Yield: ¼ cup.

From Las Delicias with Love

It was Mother’s Day, May 8, 2011, when I arrived as part of a team of eight gracious women in the Nicaraguan village of Las Delicias. The village is situated in the hilly northern area in the Matagalpa region and is surrounded by coffee plantations. We were there with the organization BuildOn to present  the community with a new school on behalf of many generous donors from the United States.

The welcoming and celebrating event was an indescribably heart-warming experience. It took place right on the grounds of the future school. For the next four days, our host families shared their food, their houses and their children with us and our lives were enriched by their culture, foods and hospitality.

Jacqualee, one of my group members, and I were fortunate to have Thelma and Ricardo and their daughter Helene as our host family. A typical day began around 5:30am with the sound of Thelma’s tortilla-making or the rooster’s cock-a-doodle-doo. Then we would have breakfast at 7am before going to work on the building project with local volunteers. A typical meal for breakfast, lunch or dinner was corn tortillas, rice, bananas, and beans, accompanied by either eggs or chicken.

Jacqualee and I were very excited when Thelma and Ricardo asked if we could teach them the cuisine we ate back home. We happily agreed and I cooked up the menu with Jacqualee. I wanted something practical that Thelma would enjoy cooking for her family and that would use ingredients that were available in her backyard or the local market—forget about Tom Yum Goong and fancy Thai dishes. We decided on Son-In-Law Eggs, Mango Salad and Sweet Rice, Bananas & Beans Wrapped in Banana Leaf.

We started with Kao Tom Mud. First Ricardo helped with cutting the banana leaf from the tree which was right outside in their yard. I removed the stems and tore the leaves into pieces 8 inches wide, then cleaned them well with a damp cloth to remove dirt. I only had to show Thelma once how to use the banana leaf for wrapping, then she took over the task with confidence. We made enough of them to give some to her neighbor.

While it was in the steamer, we prepared mango salad and son-in-law eggs. While we were cooking, Danilo, our translator, translated our cooking lesson from English into Spanish. Danilo helped me explain the most important part of Thai cooking was the harmonious blend of the four essential flavors of Thai cooking: sweet, sour, salty and spicy. The sweet was the sugar, the sour available to us was mango and two citrus juices, the spicy was Nicaraguan chili and, the salty was salt and the salty peanut that Jacqualee brought from home. I loved listening to Danilo speaking in Spanish explaining to Thelma about sweet, sour, salty and spicy. It was one of the highlights for me personally and professionally, and cooking for Thelma and Ricardo gave us a chance to thank them for their warm welcome to their home.

I have used my recipe below countless times in cooking classes. It is basically a two-stage process. In the first stage, the sticky rice cooks until it has a sticky texture but it is still grainy and raw and is ideal for wrapping around a banana. It is pliable like playdough to form or shape and then it gets wrapped by the banana leaf. The second stage is the actual cooking of Kao Tom Mud, which is generally done by steaming. We steamed the rice and banana all the way through, which can take from 30 to 50 minutes. After 30 minutes of steaming, open one up to check if more steaming time is needed.

In my Seattle kitchen, I love to put the wrap on the grill or in the oven for the second stage, which is how I teach it in my classes. Now that summer is finally here, I hope that you will enjoy preparing this recipe either in a steamer or on your grill. Banana leaves are easy to find in local Asian markets in the freezer section.

I hope that you will enjoy cooking rice, banana, and beans wrapped with banana leaves. You will feel like you are in the tropical countries of Thailand or Nicaragua.

Sweet Rice and Banana Wrapped in Banana Leaf

Kao Tom Mud 

ข้าวต้มมัด

Servings: 8

2 cups Thai sticky rice, soaked for 3 hours or overnight, and drained
¾ cup coconut milk
¼ cup water
2 tablespoons granulated sugar, optional
1 cup canned black beans, drained, optional
1 teaspoon salt
2 bananas, peeled, cut in half lengthwise and also crosswise to get 4 pieces from each banana
8 (8 X 8-inch) banana leaves or pieces of parchment paper
 
Stir sticky rice, coconut milk, sugar and salt together in a large pan over medium heat. Stir until all the coconut milk is absorbed. Stir in black beans and fold gently to mix.

Divide sticky rice mixture into 8 equal portions. Spread each portion onto a banana leaf, spreading to cover an area 6 by 4 inches, then place a section of the banana in the center. Fold the banana leaf to wrap the sticky rice around the banana.

Then fold the banana leaf into tamale-like envelope and secure both ends with a toothpick that pokes down and then up through the banana leaf. Grill for 5 minutes on each side, or until the sticky rice is translucent and cooked.

Sanuk Mai? This is a question Thais ask each other when they share experiences of any activities you do in life.

สนุก-Sanuk means to have a good time, to enjoy or to get pleasure and joy from anything we do. Tiew hai sanuk means travel and have a good time. Tum Ngan hai snuk, is to work and to enjoy working. When making choices in our life,“Sanuk” is a factor in our decision making: some pleasure has to be combined with whatever we do.  And when life is lacking Sanuk, then let’s plan it. This week in Seattle, I am going to do something I actually planned a month ahead to “Sanuk” with friends and that is to celebrate Thai New Year’s Day, or Songkran, with friends at the Washington Buddhavanaram.

Songkran is Thai New Year’s Day. It is is a national holiday in Thailand celebrated on April 13th. It is also a New Year’s Day for Lao, Burma and Cambodia. The Thai New Year is a solar new year, and not to be confused with the Chinese New Year, which is a lunar new year. In Seattle, the Thai community celebrates the holiday on Sundays so that locals can take time off on the weekend to celebrate. Please click here to see how these countries celebrate: Cambodia, Laos, Mon-Burmese and Thai. Many westerners know this celebration in Southeast Asia as the Water Festival.

Songkran is such a special day that we can’t complete our Sanuk without sharing food. Everyone brings food to share, which is set out on the table, then a bell is rung to signal lunch time. Sticky rice is well-loved, and the most popular dish to share.

I decided to do Kao Mok Gai (Phuket Baryani Rice) as a main dish, and sticky rice in bamboo tubes (my version with parchment paper in the oven) for a dessert. I chose these recipes because I wanted to do something that was easy to cook in large quantities and also something that is a traditional dish and a crown pleasure. Kao Mok Gai is a special dish from Phuket for a special event. Playing with Food: Cassava

Cassava-Sweet Potato Pancake, a delicious Thai Dessert

I noticed recently that I have told my students to play with food in almost every class. I hope they have. After learning all the essential tips and techniques, the way to become a good cook is by experiencing the ingredients and having fun.

On the weekends, I clean up the fridge and cook creatively.  This weekend I had fresh cassava and sweet potato leftover from my class. While I was holding them in my hand, I heard an echo of Rösti. Rösti is a fried, grated potato dish made in Switzerland. I made a quick decision and at almost the same time my hand reached to turn on the oven to 450°F. I will heat up my well-seasoned 8-inch cast iron pan and make this quick & easy Thai dessert, Rösti style.

Cooking with cassavas is not hard at all. After grating the cassava, Thai simply add enough sugar to sweeten to taste, and some salt to bridge the flavor; a bit of coconut milk can also be added to heighten the flavor. Then the mixture is steamed and grilled until it is cooked and translucent. But something new today that I haven’t tried before is adding grated sweet potato. Why not? It was perfect. I used about 2 parts cassava to 1 part sweet potato. The glutinous property of cassava helps the sweet potato hold up nicely, and the sweet potato gives a nice orange color and sweet compliment to the dish.

Learn something new while playing with food and discover a new excitement and a sweet reward to the lesson. Cassava-Sweet Potato Pancake makes a perfect snack or dessert with light herbal tea.

Cassava – Sweet Potato Pancake

Khanom Man Sumpalang Oop

มันสำปะหลังมันเทศแพนเค้ก

Servings: 6-8

2 cups grated cassava, fresh or frozen (if fresh , use a 10-inch-long cassava and remove the skin before grating)
1 cup grated sweet potato, about 1 small or medium
1/2 cup palm sugar or brown sugar
1/2 teaspoon salt
6 tablespoons coconut milk
2 tablespoon rice flour, optional
1 tablespoon cooking oil
 
Preheat the oven to 450 F.
 
Combine grated cassava, sweet potato, sugar, salt, coconut milk and rice flour in a large bowl; stir until well mixed.
 
Heat 8-inch cast iron pan on medium heat and cover the entire surface with cooking oil. Pour cassava-sweet potato pancake mixture into the pan and spread out evenly. Place uncovered in the center of the oven and bake for 20 minutes, until the bottom is crusty brown. Then turn the oven to broil and place the pan right underneath. The top of the pancake should be 6 inches below the heat source. Remove when the top is brown, about 3 to 5 minutes. Keep an eye on it! A nice crusty brown is the most delicious part of the cake. Let the pancake rest for 5 to 10 minutes before serving. Serve warm or cold.

Cassava is a root from the Cassava or Tapioca Plant (Manihot esculenta Crantz). It is a bushy plant that grows to about 3 meters tall. It is an annual plant with underground food-storing root-tubers. The tuber is large and long with a dark brown skin and pink underneath to protect and keep the white flesh moist. In Thailand, cassava is usually boiled or roasted and serve with sugar. It also is made into various sweets combined with grated coconut and/or coconut milk and sugar. Raw cassava is poisonous, but when cooked it became a delicious dessert.  Pearl tapioca and tapioca starch and flour are all products of cassava roots.

Comfort Me with Kabocha & Rum

I amuse myself in the kitchen every year by discovering new ways to use Kabocha, my favorite squash. Seeing snow on the ground meant no going out today, so I decided to get into the kitchen to play with the Kabocha puree that I made the other day.

I was thinking of a decadent dessert that did not require any cooking on the stovetop. I had classic cream cheese in the fridge and many basic staples in my kitchen, so I started from there. After finding the right ratio between the puree and the cream cheese, I added enough sugar to make a good balance. Then I added spiced rum, one tablespoon at a time. Spiced rum is a Caribbean rum that has an amazing blend of spices, caramel and other natural flavors. I may get a little carried away in my recipe below with the Sailor Jerry Spiced Rum, but when it comes to rum, the amount to add is very personal. At this point, there was still something missing from the recipe, and when I went through my spice rack, the nutmeg was yelling at me. Adding it did the trick—nothing more or less was needed.

While watching the snow melting away, my hand was busy spooning away this decadent dessert. It is pumpkin-creamy, sweet, with rummy-coconut and aromatic nutmeg. Just a perfect way to pamper oneself with comfort—a decadent dessert. Winter will be here for a while.

Pranee’s Spiced Rum Kabocha Mousse with Coconut Cream

Spiced Rum Kabocha Mousse

Serves: 6

8 ounces classic cream cheese
1½ cups Kabocha puree (see note)
⅓ cup evaporated cane sugar
¼ cup Sailor Jerry Spiced Rum, divided
¼ to 1 teaspoon nutmeg
6 tablespoons coconut cream (the thick top layer from a can of coconut milk)
6 Kaffir lime leaves or mint sprigs to garnish

Use an electric mixer to blend cream cheese in a large bowl until soft, about 30 seconds. Add Kabocha squash puree, sugar, 3 tablespoons rum, and nutmeg; blend on medium speed until well-blended and smooth, about 1 minute. Chill mixture in the fridge at least 3 hours before serving.

To make spiced rum coconut cream topping, whisk coconut cream and 1 tablespoon rum in a small bowl for 10 seconds. Set aside in the fridge.

To serve, place equal amounts of the mousse mixture into 6 glasses. Garnish the top with coconut cream and lime leaves or mint sprigs.

Pranee’s Tip on Making Kabocha Puree

A medium size Kabocha squash will yield 3 to 4 cups Kabocha puree. To prepare Kabocha pumpkin puree for dumplings or pie, simply remove the skin and seeds and then cut into 1-inch chunks. Steam about 15 minutes, or until tender. Use a ricer to make a fine mash.

Sticky Rice in a Bamboo Tube, Kao Lam

I have fond memories of sticky rice in a bamboo tube—it looks so cool! At every festival in my village when I was growing up, there was a man who made and sold this Kao Lam. We would eat some at the festival then bring home a few for family members who couldn’t go. It is a perfect take-home food, since it is already packaged in a bamboo tube.

The sticky rice is cooked in a segment of bamboo, the kind that has a thin wall so the heat can penetrate to cook the rice inside the tube. After it is filled with the sticky rice ingredients, the bamboo is plugged with a piece of coconut husk wrapped with banana leaf to keep in the steam for cooking the rice. Then the bamboo tubes are placed over charcoal. When it is done, the outer skin of bamboo is removed and a thin wall left behind to protect the rice inside. All Southeast Asian countries have some version of this, and they are all cooked in a similar way. The photo below is from Cambodia. In Thailand this dish is called Kao Lam; in Malaysia it’s Lemang.

If you like sticky rice with mango, you will like Kao Lam, too. I love the fact that when you peel the bamboo away (see photo below), the powdery fiber in the bamboo tube leaves a sheen. The rice comes out shaped like a stick and looks like it was wrapped in edible paper. The vendor in my village usually made three varieties: white sticky rice, black sticky rice, and white sticky rice with black beans.

How to open the bamboo tube

In America you can find cooked sticky rice that comes straight from Thailand in the frozen food section in Asian markets. But I would rather you try my sticky rice recipe below. I wrap it up in parchment paper, roll it into a cylinder, and bake it. It is delicious, has a very nice texture, and is as satisfying as the original.

During the summer of 2010, I taught Grilled Sticky Rice with Black Bean and Banana Stuffing in a Banana Leaf (Kao Neow Mad) in my Thai Grill class. Organizing my photos from my recent trip to Cambodia led me to this project, a Kao Lam version baked in the oven. It is not easy to cook sticky rice in a bamboo tube—only a few experts from each Thai village know how. Last August I created this adaptation, wrapping and rolling the sticky rice in pieces of parchment paper and then baking them. The results were good. It was easy, and the flavor and texture were satisfying. Then I made a lot of them in small packages and even put some in the freezer. I microwave them or reheat them in the oven and eat them for a protein snack before teaching my classes. In Thailand, most farmers eat sticky rice before working in the rice field.

Baked Sticky Rice and Black Bean Wrapped in Banana Leaf

Kao Neow Yang

Serveings: 8

2 cups Thai sticky rice, soaked in water for 3 hours or overnight, then drained (see note)
¾ cup coconut milk
¼ cup water
2 tablespoons granulated sugar, optional
1 teaspoon salt
1 cup canned black beans, drained
8 (8×8) inch pieces of banana leaves or parchment paper

Preheat oven to 350°F.

Stir sticky rice, coconut milk, water, sugar and salt in a large pan over medium heat. Stir until all coconut milk is absorbed. Stir in black beans and fold gently to mix.

Put equal amounts of the sticky rice mixture onto 8 banana leaves. Form the rice into a cylinder about 6″ long and lay it in the center of the leaf so that you have about 1 inch left on either end. Fold the banana leaf in half around the rice, then roll it around the cylinder; fold in both ends and secure them with a toothpick, poking down and then up, or you can twist the ends and tie them. When you are done, each bundle will make a round tube about 6 inches long and 1 to 1 1/2 inches in diameter. Grill for 5 minutes on each side until the sticky rice is translucent and cooked, or bake in the oven for 10 minutes.

In Thailand, recipes generally use one of two types of rice: jasmine rice or Thai sticky rice. The starch in rice is made up of two components, amylose and amylopectin. Jasmine rice has more amylose than amylopectin, giving it a puffy appearance, whereas Thai sticky rice has more amylopectin than amylose, creating its sticky texture. Both white and purple Thai sticky rice are long-grain rices with a firm grain and become sticky when cooked. They are tropical rices, and different from Japanese, Chinese or Mediterranean (Arborio and Valencia) rices, which have a medium or short grain and grow in temperate climates.
